Ingredients:
- 1 cup finely chopped rhubarb
- 1/4 cup sugar
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 egg
- 1/3 cup milk
- 1 tsp vanilla
- Oil for frying
- Glaze
- 1/2 cup icing sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla
Instructions:
- Toss chopped rhubarb with sugar and let sit for 10 minutes.
- Whisk flour, baking powder, salt, cinnamon, and nutmeg together.
- In another bowl, beat egg, then add milk and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fold in sugared rhubarb.
- Heat oil to 350°F (175°C).
- Drop heaping tablespoons of batter into oil; fry about 2 minutes per side until golden.
- Drain on paper towels.
- Mix icing sugar, milk, and vanilla, then drizzle glaze over warm fritters.
