Rhubarb Fritters

Ingredients:

  • 1 cup finely chopped rhubarb
  • 1/4 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg
  • 1/3 cup milk
  • 1 tsp vanilla
  • Oil for frying
  • Glaze
  • 1/2 cup icing sugar
  • 1–2 tbsp milk
  • 1/2 tsp vanilla

Instructions:

  1. Toss chopped rhubarb with sugar and let sit for 10 minutes.
  2. Whisk flour, baking powder, salt, cinnamon, and nutmeg together.
  3. In another bowl, beat egg, then add milk and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in sugared rhubarb.
  6. Heat oil to 350°F (175°C).
  7. Drop heaping tablespoons of batter into oil; fry about 2 minutes per side until golden.
  8. Drain on paper towels.
  9. Mix icing sugar, milk, and vanilla, then drizzle glaze over warm fritters.
