Raspberry Zinger Poke Cake

Ingredients:

  • 1 box white cake mix (plus ingredients called for on the box)
  • 1 cup boiling water
  • 1 box (3 oz) raspberry-flavored gelatin
  • 1 cup cold water
  • 1 cup shredded sweetened coconut
  • 1 tub (8 oz) whipped topping (like Cool Whip), thawed
  • 1 cup raspberry jam or preserves
    Fresh raspberries for garnish (optional)

Directions:

  1. Bake Cake:
    Prepare cake mix per box instructions in non-stick pan. Cool 15 mins.

  2. Make Gelatin:
    Dissolve gelatin in 1 cup boiling water. Add 1 cup cold water.

  3. Poke & Soak:
    Poke deep holes with wooden spoon handle (or poke tool). Slowly pour gelatin over cake. Refrigerate 2+ hours.

  4. Layer Toppings:
    Spread raspberry jam over cake. Top with whipped topping using offset spatula. Sprinkle coconut.

  5. Garnish:
    Add fresh raspberries. Chill 30 mins before slicing.
