Ingredients:
- 1 box white cake mix (plus ingredients called for on the box)
- 1 cup boiling water
- 1 box (3 oz) raspberry-flavored gelatin
- 1 cup cold water
- 1 cup shredded sweetened coconut
- 1 tub (8 oz) whipped topping (like Cool Whip), thawed
- 1 cup raspberry jam or preserves
Fresh raspberries for garnish (optional)
Directions:

Bake Cake:
Prepare cake mix per box instructions in non-stick pan. Cool 15 mins. -
Make Gelatin:
Dissolve gelatin in 1 cup boiling water. Add 1 cup cold water. -
Poke & Soak:
Poke deep holes with wooden spoon handle (or poke tool). Slowly pour gelatin over cake. Refrigerate 2+ hours. -
Layer Toppings:
Spread raspberry jam over cake. Top with whipped topping using offset spatula. Sprinkle coconut. -
Garnish:
Add fresh raspberries. Chill 30 mins before slicing.
