- 4 boneless, skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1/2 cup raspberry preserves
- 1 fresh jalapeño, finely diced (seeds removed for less heat)
- 1 teaspoon apple cider vinegar
- 8 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded sharp cheddar cheese
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
1. Prepare the Chicken
Preheat oven to 375°F (190°C).
Lightly grease a baking dish.
Pat the chicken breasts dry and season both sides with salt, black pepper, and garlic powder.
Heat olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until lightly golden (it does not need to be fully cooked). Transfer to the prepared baking dish.
2. Make the Sweet & Spicy Sauce
In a small bowl, combine raspberry preserves, diced jalapeño, and apple cider vinegar. Stir well until evenly mixed.
3. Add the Creamy Layer
Spread softened cream cheese evenly over each chicken breast.
Spoon the raspberry jalapeño mixture over the cream cheese layer.
Sprinkle mozzarella and cheddar cheese evenly on top.
4. Bake
Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
If desired, broil for 1–2 minutes at the end for a lightly golden top.
