Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1/2 cup canned pumpkin puree
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 8 slices thick-cut bread (such as brioche or challah)
  • Butter or oil for cooking
  • Powdered sugar (optional)
  • Maple syrup, for serving
  • Whipped cream (optional)

Instructions

1. Prepare the Pumpkin Mixture:
In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.

2. Dip the Bread:
Heat a skillet or griddle over medium heat and add butter or oil. Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side. Let any excess mixture drip off before placing the bread on the skillet.

3. Cook the French Toast:
Cook each slice for about 2 to 3 minutes per side, or until golden brown and cooked through. Adjust the heat if needed to ensure even cooking without burning.

4. Serve:
Serve warm with powdered sugar if desired. Add maple syrup and whipped cream if preferred.

Top with caramelized pecans or a sprinkle of extra cinnamon for added flavor.
