Protein Cottage Cheese Flourless Brownies

Ingredients:

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup pure honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional mix-ins: 1/4 cup chocolate chips or chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease.
  2. Add cottage cheese to a blender or food processor and blend until completely smooth. This step is key for a fudgy texture.
  3. Add eggs, honey or maple syrup, and vanilla extract. Blend until fully combined.
  4. Add cocoa powder, baking powder, and salt. Blend again until smooth and thick.
  5. If using, fold in chocolate chips or walnuts by hand.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 22–28 minutes, until the edges are set and the center is just slightly soft.
  8. Let cool completely in the pan before slicing for best texture.

Serving Tips

  • Chill in the fridge for extra-fudgy brownies
  • Serve with fresh berries or a spoon of Greek yogurt
  • Warm slightly and drizzle with nut butter for a dessert-style treat

Storage

Store brownies in an airtight container in the refrigerator for up to 5 days. They also freeze well for up to 2 months.

Notes & Variations

  • For lower sugar, reduce honey to 1/3 cup
  • Add 1/2 teaspoon espresso powder to enhance the chocolate flavor
  • Use sugar-free chocolate chips to keep them lighter
