Popeye’s Copycat Fried Chicken

Ingredients:

  • 2 lbs chicken pieces (drumsticks, thighs, wings)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional for heat)
  • Vegetable oil for frying

Instructions:

  1. Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover and refrigerate for at least 4 hours, preferably overnight. This helps tenderize the chicken and adds flavor.
  2. In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Remove the chicken from the buttermilk, letting the excess drip off. Coat each piece well in the seasoned flour mixture, pressing the flour onto the chicken so it sticks.
  4. Heat vegetable oil in a deep skillet or fryer to about 175°C / 350°F.
  5. Carefully place the chicken pieces into the hot oil. Fry in batches so the pan is not overcrowded.
  6. Cook for 12–15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  7. Remove the chicken and place it on a rack or paper towels to drain excess oil. Let it rest a few minutes before serving.

Serving Tips

Serve hot with biscuits, coleslaw, mashed potatoes, or fries for a classic fried chicken meal.
