Ingredients:
for the filling:
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup sliced pepperoni (optional)
for assembly:
- 8–10 flour tortillas
- additional shredded mozzarella for topping
- grated parmesan (optional)
- chopped fresh basil or parsley for garnish
Instructions:
- preheat oven to 180°c (350°f).
- in a skillet over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. drain excess fat.
- add garlic, oregano, basil, salt, and pepper. cook 1–2 minutes until fragrant.
- stir in pizza sauce and 1 1/2 cups mozzarella cheese until well combined. remove from heat.
- lay out a tortilla, spoon 1/4–1/3 cup of the beef mixture onto the center, add a few pepperoni slices if using, then roll tightly. repeat with remaining tortillas and filling.
- place rolled enchiladas seam-side down in a greased baking dish.
- top with remaining mozzarella and parmesan cheese.
- bake uncovered for 20–25 minutes, until cheese is melted and bubbly.
- garnish with fresh basil or parsley before serving.
