Pecan Toffee Club Crackers

Ingredients:

• 42 Club Crackers
• 1 cup butter (2 sticks)
• 1 cup granulated sugar
• 2 teaspoons vanilla extract
• 1 1/2 cups chopped pecans

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with foil and arrange the Club Crackers in a single layer.
  3. In a medium saucepan over medium heat, melt the butter.
  4. Add the sugar and bring the mixture to a boil, stirring constantly.
  5. Once boiling, continue cooking for 2 minutes while stirring.
  6. Remove from heat and carefully stir in the vanilla extract.
  7. Pour the hot toffee mixture evenly over the crackers.
  8. Sprinkle chopped pecans evenly over the top.
  9. Bake for 10–12 minutes, or until lightly browned and bubbly.
  10. Remove from oven and allow to cool completely.
  11. Once cooled, break apart into individual crackers.
