Pecan Pie Cobbler

Ingredients

For the Cobbler:

  • 1½ cups gluten-free flour (or all-purpose)
  • 1 tablespoon baking powder
  • 1 cup granulated sugar
  • 1 cup milk
  • ½ cup (1 stick) melted butter
  • 1 teaspoon vanilla extract

For the Topping:

  • 1½ cups chopped pecans
  • 1 cup brown sugar, packed
  • 1½ cups boiling water

Instructions

  1. Preheat Oven
    Set oven to 350°F (175°C). Pour melted butter into the bottom of a 9×13-inch baking dish.
  2. Make the Batter
    In a medium bowl, whisk together flour, baking powder, sugar, milk, and vanilla until smooth. Pour the batter evenly over the butter — do not stir.
  3. Add the Pecans and Sugar
    Sprinkle chopped pecans evenly over the batter, then add the brown sugar on top.
  4. Pour Hot Water
    Carefully pour boiling water over the top. Do not stir.
  5. Bake
    Bake uncovered for 45–50 minutes, or until the top is golden brown and the cobbler is bubbling around the edges.
  6. Serve
    Let cool for 10–15 minutes before serving. Best enjoyed warm with vanilla ice cream or whipped cream.

Storage

Store leftovers covered in the refrigerator for up to 3 days. Reheat gently before serving.
