Ingredients
For the Cobbler:
- 1½ cups gluten-free flour (or all-purpose)
- 1 tablespoon baking powder
- 1 cup granulated sugar
- 1 cup milk
- ½ cup (1 stick) melted butter
- 1 teaspoon vanilla extract
For the Topping:
- 1½ cups chopped pecans
- 1 cup brown sugar, packed
- 1½ cups boiling water
Instructions
- Preheat Oven
Set oven to 350°F (175°C). Pour melted butter into the bottom of a 9×13-inch baking dish. - Make the Batter
In a medium bowl, whisk together flour, baking powder, sugar, milk, and vanilla until smooth. Pour the batter evenly over the butter — do not stir. - Add the Pecans and Sugar
Sprinkle chopped pecans evenly over the batter, then add the brown sugar on top. - Pour Hot Water
Carefully pour boiling water over the top. Do not stir. - Bake
Bake uncovered for 45–50 minutes, or until the top is golden brown and the cobbler is bubbling around the edges. - Serve
Let cool for 10–15 minutes before serving. Best enjoyed warm with vanilla ice cream or whipped cream.
Storage
Store leftovers covered in the refrigerator for up to 3 days. Reheat gently before serving.
