Pecan Pie Balls (No-Bake)

Ingredients

  • 2 cups pecans, toasted & finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup brown sugar, packed
  • ½ teaspoon salt
  • 2 tablespoons maple syrup
  • ¼ cup bourbon or apple juice
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips, melted (for dipping)

Method

  1. Mix It Up:
    In a large bowl, combine pecans, graham crumbs, brown sugar, and salt.
  2. Flavor Boost:
    Stir in maple syrup, bourbon (or apple juice), and vanilla extract until everything is evenly moistened. The mixture should stick together when pressed.
  3. Shape:
    Roll into small bite-sized balls (about 1 inch). Place them on parchment paper.
  4. Chill:
    Refrigerate or freeze for 15–20 minutes so they firm up nicely.
  5. Dip & Set:
    Dip each ball into melted chocolate, then return to parchment paper. Let the chocolate set (you can pop them in the fridge for faster results).

Storage Tip:

Keep in an airtight container in the fridge up to 1 week or freeze up to 2 months.
