Ingredients:
For the biscuits:
- ½ cup (1 stick) salted butter
- 2½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon aluminum-free baking powder
- 2 cups heavy cream
- 1½ teaspoons vanilla extract, divided
- 1 (15.25-ounce) can diced peaches, very well drained
For the icing:
- 1 cup powdered sugar
- 3 tablespoons milk
Instructions:
1. Preheat the oven
Preheat oven to 450°F. Lightly grease a 9×9-inch glass or ceramic baking dish.
2. Mix dry ingredients
In a medium bowl, combine flour, sugar, and baking powder.
3. Make the dough
Add heavy cream and 1 teaspoon vanilla extract. Stir until a sticky dough forms. If the dough seems dry, add a small amount of additional cream.
4. Add peaches
Gently fold in the drained diced peaches.
5. Melt the butter
Melt the butter and pour it into the prepared baking dish, spreading it evenly across the bottom.
6. Add the dough
Spoon the dough directly over the melted butter. Spread it out evenly. Some butter may rise over the top.
7. Score the dough
Cut the dough into 9 squares to make serving easier after baking.
8. Bake
Bake on the center rack for 30 to 35 minutes, rotating the dish once during baking.
If the top browns too quickly, loosely cover with foil.
The biscuits are done when golden brown and a toothpick inserted in the center comes out clean.
Icing
In a small bowl, whisk together powdered sugar, milk, and remaining ½ teaspoon vanilla extract.
Drizzle over warm biscuits.
Serving
Allow the biscuits to cool slightly before cutting and serving. Best enjoyed warm.
Notes & Tips
- Drain peaches thoroughly to avoid excess moisture in the dough.
- You can use peach slices cut into smaller chunks if diced peaches are unavailable.
- Use a glass or ceramic baking dish for best results; avoid metal pans.
- Baking time may vary depending on your oven type and rack position.
- For accuracy, start checking at the lower end of baking time and adjust as needed.
