Parmesan Garlic Chicken Burritos

Ingredients

For the chicken:

  • 1 lb chicken breast, cut into cubes or strips
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder (optional for extra flavor)

For the garlic parmesan sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon parsley (fresh or dried)
  • Salt and pepper to taste

For assembling:

  • 4 large flour tortillas
  • 1 cup shredded mozzarella (or a blend of mozzarella and cheddar)
  • 1/2 cup fresh spinach or lettuce
  • 1/2 cup diced tomatoes (optional)

Instructions

  1. Cook the Chicken:
    In a large skillet, melt 2 tablespoons of butter over medium heat.
    Add the chicken, season with salt, pepper, and paprika.
    Cook until golden and cooked through (about 6–8 minutes). Remove and set aside.
  2. Make the Garlic Parmesan Sauce:
    In the same pan, melt 2 tablespoons of butter.
    Add minced garlic and sauté for about 30 seconds until fragrant.
    Pour in the heavy cream, then add Parmesan cheese and parsley.
    Stir continuously until the sauce thickens slightly. Season with salt and pepper.
  3. Combine:
    Add the cooked chicken back into the sauce and coat well.
    Let it simmer for 2 minutes to absorb the flavor.
  4. Assemble the Burritos:
    Lay out each tortilla.
    Add a spoonful of the creamy chicken mixture, some mozzarella, spinach, and diced tomatoes.
    Roll them tightly into burritos.
  5. Grill the Burritos:
    Heat a clean skillet or grill pan and lightly toast each burrito for 2–3 minutes per side until golden brown and crispy.
  6. Serve:
    Slice in half, drizzle extra garlic parmesan sauce on top, and sprinkle some Parmesan for a cheesy finish!

Tips:

Add cooked bacon or sautéed mushrooms for extra flavor.

For a lighter version, use Greek yogurt instead of heavy cream.
