Orange Cranberry Shortbread Cookies

Ingredients:

  • 1¼ cups all-purpose flour
  • ⅓ cup + 1 tbsp granulated sugar
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • 113 g cold unsalted butter, cubed
  • ¼ cup finely chopped fresh cranberries
  • ½ tbsp orange zest
  • Orange Glaze:
  • ⅔ cup powdered sugar
  • 3 tsp orange juice

Instructions:

  1. Mix flour, sugar, cornstarch, and salt.
  2. Add cold butter cubes and mix until the texture resembles wet sand.
  3. Stir in cranberries and orange zest.
  4. Form dough into a ball, then roll between parchment into a 4×12-inch rectangle.
  5. Freeze 20 minutes.
  6. Preheat oven to 325°F (163°C).
  7. Slice into 24 cookie sticks and place on a lined baking sheet.
  8. Bake 20 minutes, until edges lightly brown.
  9. While warm, gently reshape if needed.
  10. Cool completely.
  11. Mix glaze ingredients and drizzle over cookies.
