Ingredients:
- 1 lb baby potatoes (halved or quartered)
- 8 oz green beans (washed and trimmed)
- 1 small yellow onion (sliced or cut into wedges – about 1 cup)
- 1 lb pre-cooked andouille sausage or kielbasa (sliced on the bias)
- 1/4 cup olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Prep your veggies: Slice potatoes and onion, trim green beans, and cut sausage.
- Combine everything in a large mixing bowl. Add olive oil, garlic powder, salt, pepper, and Italian seasoning. Toss until well coated.
- Spread evenly on a large sheet pan in a single layer.
- Roast for 35–40 minutes, tossing halfway through, until potatoes are golden and fork-tender.
- Serve hot, straight from the pan!

- Want more crisp? Broil for the last 2–3 minutes.
- Swap green beans for asparagus or bell peppers.
- Use smoked turkey sausage for a lighter twist.
