One Pan Sausage, Green Beans & Potatoes

Ingredients:

  • 1 lb baby potatoes (halved or quartered)
  • 8 oz green beans (washed and trimmed)
  • 1 small yellow onion (sliced or cut into wedges – about 1 cup)
  • 1 lb pre-cooked andouille sausage or kielbasa (sliced on the bias)
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prep your veggies: Slice potatoes and onion, trim green beans, and cut sausage.
  3. Combine everything in a large mixing bowl. Add olive oil, garlic powder, salt, pepper, and Italian seasoning. Toss until well coated.
  4. Spread evenly on a large sheet pan in a single layer.
  5. Roast for 35–40 minutes, tossing halfway through, until potatoes are golden and fork-tender.
  6. Serve hot, straight from the pan!

Tips & Variations:

  • Want more crisp? Broil for the last 2–3 minutes.
  • Swap green beans for asparagus or bell peppers.
  • Use smoked turkey sausage for a lighter twist.
