Oatmeal Raisin Cookie Bars

Ingredients:

For the cookie bars:

  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon fine salt
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 cup raisins
  • ½ cup chopped walnuts or pecans (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream the softened butter with both sugars until light and fluffy, about 2–3 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined. Don’t overmix.
  6. Fold in the oats, raisins, and optional nuts until evenly distributed.
  7. Spread the dough evenly into the prepared baking dish and smooth the top with a spatula.
  8. Bake for 22–25 minutes, or until golden around the edges and set in the center. Don’t overbake — they’ll continue to firm up as they cool.
  9. Let cool in the pan for at least 15 minutes before slicing into bars.
