Ingredients:
For the cookie bars:
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon ground cinnamon
- ½ teaspoon fine salt
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups old-fashioned rolled oats
- 1 cup raisins
- ½ cup chopped walnuts or pecans (optional)
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, cream the softened butter with both sugars until light and fluffy, about 2–3 minutes.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually mix in the dry ingredients until just combined. Don’t overmix.
- Fold in the oats, raisins, and optional nuts until evenly distributed.
- Spread the dough evenly into the prepared baking dish and smooth the top with a spatula.
- Bake for 22–25 minutes, or until golden around the edges and set in the center. Don’t overbake — they’ll continue to firm up as they cool.
- Let cool in the pan for at least 15 minutes before slicing into bars.
