Ingredients:
- 2 cups (200 g) rolled oats, blended into a coarse flour
- 1 teaspoon baking powder
- 1 cup (240 ml) milk of your choice
- 1 carrot, finely grated
- 1 apple, grated (with skin if preferred)
- 9 dried apricots, rinsed with hot water and chopped
- 4 tablespoons raisins, rinsed with hot water
Optional additions:
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons chopped nuts or seeds
Instructions:
1. Prepare the Oats
Place the rolled oats in a blender and pulse until they reach a coarse flour consistency.
2. Mix the Batter
In a large bowl, combine the blended oats and baking powder.
Add the milk and stir until combined.
Fold in the grated carrot, grated apple, chopped apricots, and raisins. Mix well.
If using cinnamon or vanilla, stir them in at this stage.
3. Bake
Preheat your oven to 350°F (180°C).
Line or lightly grease a small baking dish (8×8-inch works well).
Pour the mixture into the dish and spread evenly.
Bake for 30–35 minutes, or until set and lightly golden on top.
4. Cool and Serve
Allow to cool for at least 10 minutes before slicing. Serve warm or at room temperature.
Serving Ideas
- Enjoy plain for a naturally sweet breakfast.
- Add a spoon of plain yogurt on top.
- Sprinkle with chopped nuts for extra crunch.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
It can also be frozen in slices for quick grab-and-go portions.
