Directions:
- In a medium bowl, mix crushed graham crackers, sugar, and melted butter.
- Press mixture firmly into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until blended.
- Whip heavy cream in a separate bowl until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture. - Pour filling over prepared crust and smooth the top.
- Chill in the refrigerator for at least 4 hours until set.
Serve topped with fresh fruit or chocolate sauce if desired.
