Mozzarella Stuffed Bacon Wrapped Meatloaf

Ingredients:

Meatloaf

  • 1½ lb ground beef (or beef blend)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce

Filling

  • 1½–2 cups mozzarella cheese (block or sticks)

Bacon Wrap

  • 10–12 slices bacon

Topping (Optional)

  • ⅓ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, salt, pepper, paprika, Italian seasoning, ketchup, and Worcestershire sauce. Mix gently until just combined.
  3. Shape the meat mixture into a rectangle on the prepared baking sheet.
  4. Place the mozzarella cheese down the center of the meat.
  5. Fold the meat around the cheese, sealing the edges and shaping into a loaf.
  6. Wrap bacon slices around the meatloaf, slightly overlapping.
  7. In a small bowl, mix ketchup, brown sugar, and mustard. Brush evenly over the bacon.
  8. Bake uncovered for 50–60 minutes, or until the bacon is crispy and the internal temperature reaches 160°F (71°C).
  9. Let rest for 10 minutes before slicing.

Serving Tips

  • Serve with mashed potatoes, roasted vegetables, or a simple green salad.
  • Leftovers reheat well and make great sandwiches the next day.
