Mozzarella Cheese Yeast Dinner Rolls

 

Ingredients:

  • 1/2 cup milk
  • 1/4 cup water
  • 2 Tbsp butter
  • 2 cups all-purpose flour, divided (plus up to 1/2 cup more if needed)
  • 2 Tbsp granulated sugar
  • 1 tsp salt
  • 1 large egg
  • 1 package fast-rise dry yeast
  • 12 chunks mozzarella cheese
  • Olive oil
  • Melted butter
  • Garlic salt
  • Grated Parmesan cheese

Instructions:

  1. Heat milk, water, and butter together to 115–125°F.
  2. In a large bowl, combine 1 cup flour, sugar, salt, egg, and yeast.
  3. Add the warm liquid and beat on medium speed for 2 minutes.
  4. Stir in the remaining 1 cup flour. Add up to 1/2 cup more flour if needed; dough should be sticky.
  5. Turn dough onto a floured surface and knead until smooth and elastic, about 10 minutes.
  6. Place dough in an oiled bowl, cover, and rest for 10 minutes.
  7. Divide dough into 12 equal balls.
  8. Flatten each ball into a 3–4 inch circle. Place a mozzarella chunk in the center and pinch to seal.
  9. Arrange rolls in a greased muffin pan or on a baking sheet, spacing at least 1 inch apart. Cover and let rise until doubled, 30–45 minutes.
  10. Preheat oven to 400°F. Brush rolls with melted butter mixed with olive oil.
  11. Sprinkle lightly with garlic salt and Parmesan cheese.
  12. Bake for 10–15 minutes, until golden brown.
