Ingredients:
- 2 lb Yukon gold potatoes (about 4 medium), scrubbed, partially cooked, thinly sliced or diced into ½-inch cubes
- 1/4 cup olive oil
- 3–4 tablespoons unsalted butter
- 1 large onion (yellow or Vidalia), sliced
- Salt and pepper, to taste
Instructions:
- Melt the butter with the olive oil in a large skillet over medium-high heat.
- Add the potatoes and spread them evenly in the pan. Cook undisturbed for about 5 minutes, until golden brown on one side.
- Carefully turn the potatoes and add the sliced onion to the skillet.
- Continue cooking, turning every few minutes, until the potatoes are well browned and the onions are soft and caramelized, about 10–15 minutes more.
- Season with salt and pepper to taste and serve immediately.
