Mom’s Fried Potatoes and Onions

Ingredients:

  • 2 lb Yukon gold potatoes (about 4 medium), scrubbed, partially cooked, thinly sliced or diced into ½-inch cubes
  • 1/4 cup olive oil
  • 3–4 tablespoons unsalted butter
  • 1 large onion (yellow or Vidalia), sliced
  • Salt and pepper, to taste

Instructions:

  1. Melt the butter with the olive oil in a large skillet over medium-high heat.
  2. Add the potatoes and spread them evenly in the pan. Cook undisturbed for about 5 minutes, until golden brown on one side.
  3. Carefully turn the potatoes and add the sliced onion to the skillet.
  4. Continue cooking, turning every few minutes, until the potatoes are well browned and the onions are soft and caramelized, about 10–15 minutes more.
  5. Season with salt and pepper to taste and serve immediately.
