Moist Banana Bread Recipe

Ingredients:

  • 3 very ripe bananas (medium to large)
  • ½ cup unsalted butter (8 tablespoons), room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 cup walnuts, toasted and chopped
  • ½ cup raisins

Instructions:

  1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. Lightly toast the walnuts in a skillet over medium heat, stirring frequently so they don’t burn. Chop coarsely and let cool.
  3. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Mash the bananas with a fork until they resemble chunky applesauce. Add them to the butter mixture along with the eggs. Mix until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Stir in the vanilla extract, toasted walnuts, and raisins.
  7. Pour the batter into the prepared loaf pan. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the banana bread rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
