Mini German Pancakes

Ingredients:

  • 6 large eggs
  • 1 cup milk
  • ½ tsp vanilla extract
  • 1 cup all-purpose flour
  • ¼ tsp salt

Instructions

  1. Preheat oven to 400°F (200°C). Place a mini muffin pan in the oven to heat for 10 minutes.
  2. Blend eggs, milk, and vanilla until smooth.
  3. Add flour and salt; blend just until combined.
  4. Remove hot pan, spray well with cooking spray, and fill each cup halfway with batter.
  5. Bake immediately for 8–10 minutes, until puffed and lightly browned.
  6. Remove and serve warm with your favorite toppings.
