Ingredients:
- 6 large eggs
- 1 cup milk
- ½ tsp vanilla extract
- 1 cup all-purpose flour
- ¼ tsp salt
Instructions
- Preheat oven to 400°F (200°C). Place a mini muffin pan in the oven to heat for 10 minutes.
- Blend eggs, milk, and vanilla until smooth.
- Add flour and salt; blend just until combined.
- Remove hot pan, spray well with cooking spray, and fill each cup halfway with batter.
- Bake immediately for 8–10 minutes, until puffed and lightly browned.
- Remove and serve warm with your favorite toppings.
