Ingredients
- 500 g ground beef
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 small red onion, sliced
- 1 small yellow onion, sliced
- 2 cloves garlic, minced
- 100 g feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon dried oregano
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Add the sliced onions and garlic. Sauté for 2–3 minutes until fragrant and slightly softened.
- Stir in the zucchini and cook for another 3–4 minutes until tender.
- Add the cherry tomatoes, oregano, salt, and pepper. Continue cooking for 5–6 minutes until the tomatoes release their juices and the flavors blend.
- Remove from heat and sprinkle with crumbled feta cheese.
- Garnish with fresh parsley before serving.

- Great as a filling for wraps or pitas.
