Mediterranean Ground Beef Skillet

Ingredients

  • 500 g ground beef
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 1 small yellow onion, sliced
  • 2 cloves garlic, minced
  • 100 g feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  3. Add the sliced onions and garlic. Sauté for 2–3 minutes until fragrant and slightly softened.
  4. Stir in the zucchini and cook for another 3–4 minutes until tender.
  5. Add the cherry tomatoes, oregano, salt, and pepper. Continue cooking for 5–6 minutes until the tomatoes release their juices and the flavors blend.
  6. Remove from heat and sprinkle with crumbled feta cheese.
  7. Garnish with fresh parsley before serving.

Serving Suggestions

  • Serve with rice, couscous, or quinoa for a full meal.
  • Great as a filling for wraps or pitas.
  • Can be enjoyed warm or at room temperature as a Mediterranean-style salad bowl.
