Magic Lemon Cobbler (Golden, Gooey & Irresistible)

Ingredients:

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1½ cups granulated sugar, divided
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 can (21 oz) lemon pie filling
  • Zest of 1 lemon (optional)
  • Powdered sugar, for dusting

Instructions:

  1. Preheat oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish, tilting to coat the bottom evenly.
  2. In a bowl, whisk flour, 1 cup sugar, baking powder, and salt.
  3. Stir in milk and vanilla until smooth; do not overmix.
  4. Pour batter over the melted butter. Do not stir.
  5. Spoon lemon pie filling evenly over the batter. Sprinkle remaining ½ cup sugar and lemon zest on top.
  6. Bake uncovered for 45–50 minutes, until the top is golden and set while the center remains gooey.
  7. Rest 10 minutes, dust with powdered sugar, and serve warm.
