Lemon Parmesan Kale Salad

 

Ingredients:

  • 4 cups curly kale, finely chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • ¼ tsp fresh minced garlic
  • ¼ tsp salt
  • ⅛ tsp black pepper (or to taste)
  • ½ cup croutons
  • ¼ cup freshly grated Parmesan cheese

Instructions:

  1. Wash, dry, and remove kale leaves from the stems. Finely chop and place in a large bowl.
  2. In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and black pepper.
  3. Drizzle about ½ teaspoon of the dressing over the kale and massage with your hands until the leaves darken, soften, and become tender.
  4. Add the remaining dressing and toss well.
  5. Top with freshly grated Parmesan cheese.
  6. Crush croutons into small pieces and sprinkle over the salad just before serving. Serve immediately for best texture.
