Lemon Fluff Dessert

Ingredients:

  • 1 large package lemon gelatin
  • 2 cups boiling water
  • 1 cup cold water
  • 1 tub whipped topping, thawed
  • 1 cup mini marshmallows
  • 1 cup crushed pineapple, well drained

Instructions:

  1. In a large bowl, dissolve the lemon gelatin in 2 cups of boiling water. Stir until completely dissolved.
  2. Add 1 cup cold water and mix well.
  3. Refrigerate for about 1 hour, or until the mixture begins to thicken but is not fully set.
  4. Gently fold in the whipped topping until smooth and fully combined.
  5. Stir in the mini marshmallows and drained pineapple.
  6. Transfer to a serving dish and refrigerate for at least 2 hours, or until fully set and fluffy.
