Ingredients:
- 1 box (15.25 oz) lemon cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon lemon extract (optional)
- 1 tablespoon lemon zest
- 1 cup powdered sugar
- 1 tablespoon granulated sugar
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix cake mix, eggs, oil, lemon extract, and lemon zest until a thick dough forms.
- Combine powdered sugar and granulated sugar in a bowl.
- Roll dough into 1–1.5 inch balls, then coat fully in the sugar mixture.
- Place on the baking sheet and bake for 9–11 minutes until crinkled and soft.
- Cool 5 minutes, transfer to a rack, and dust with extra powdered sugar.
