Ingredients:
- Crust
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/4 tsp salt
- 1 cup salted butter, cubed (plus more for greasing)
- Filling
- 1 1/2 cups sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- Zest and juice of 4 lemons
- Powdered sugar, for topping
Instructions:
- Preheat oven to 350°F (175°C). Butter a 9×13-inch baking pan.
- In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly. Press evenly into the pan and bake 20 minutes, until lightly golden.
- In another bowl, whisk sugar and flour. Add eggs, lemon zest, and lemon juice; mix until smooth.
- Pour filling over hot crust and bake another 20 minutes, until set.
- Chill at least 2 hours. Dust with powdered sugar and cut into squares.
