Lemon Bars

 

Ingredients:

  • Crust
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 cup salted butter, cubed (plus more for greasing)
  • Filling
  • 1 1/2 cups sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • Zest and juice of 4 lemons
  • Powdered sugar, for topping

Instructions:

  • Preheat oven to 350°F (175°C). Butter a 9×13-inch baking pan.
  • In a bowl, mix flour, sugar, and salt. Cut in butter until crumbly. Press evenly into the pan and bake 20 minutes, until lightly golden.
  • In another bowl, whisk sugar and flour. Add eggs, lemon zest, and lemon juice; mix until smooth.
  • Pour filling over hot crust and bake another 20 minutes, until set.
  • Chill at least 2 hours. Dust with powdered sugar and cut into squares.
