Directions:
- Preheat your oven to 350°F (175°C). Place the stick of butter or margarine in a 9×13-inch baking dish and put it in the oven while it preheats. Let it melt completely—keep an eye on it so it doesn’t brown too much.
- Mix the batter: In a medium bowl, combine the flour, sugar, baking powder, and a dash of salt. Slowly pour in the milk and whisk until you get a smooth, lump-free batter.
- Pour the batter over the butter: Once the butter is fully melted, carefully remove the dish from the oven. Pour the batter evenly over the melted butter—but do not stir! The batter will rise up around the fruit as it bakes, creating that golden, cake-like top.
- Add the fruit: Spoon the sweetened peaches (with their juice) evenly over the top of the batter. Again, don’t stir—just let everything settle naturally.
- Bake: Return the dish to the oven and bake for about 45 to 55 minutes, or until the top is golden brown and set. The edges should be crisp and bubbling with peachy goodness.
- Cool slightly before serving: Let the cobbler rest for 10–15 minutes before digging in. It’s fantastic warm, especially with a scoop of vanilla ice cream or a dollop of whipped cream!
