Ingredients :
Cranberry Layer:
- 1 package (3 ounces) cranberry or raspberry gelatin
- 1 cup boiling water
- 1 can (14 ounces) whole-berry cranberry sauce
Lemon Layer:
- 1 package (3 ounces) lemon gelatin
- 1 cup boiling water
- 3 ounces cream cheese, softened
- 1/3 cup mayonnaise
- 1 can (8 ounces) crushed pineapple, undrained
- 1/2 cup heavy whipping cream, whipped
- Optional: mini marshmallows and chopped pecans (as used in your directions)
Directions :
- In a small bowl, dissolve the cranberry gelatin in boiling water. Stir in the whole-berry cranberry sauce until fully blended.
- Pour the mixture into an 8-inch square dish and refrigerate until set.
- In another bowl, dissolve the lemon gelatin in boiling water.
- In a separate bowl, beat the cream cheese and mayonnaise until smooth. Stir the mixture into the lemon gelatin along with the crushed pineapple.
- Refrigerate until slightly thickened, about 2 hours.
- Fold the whipped cream, marshmallows, and pecans into the cream cheese mixture.
- Spread the lemon layer evenly over the cranberry layer.
- Refrigerate for 4 hours or until fully set.
