Layered Cranberry Gelatin Salad

Ingredients :

Cranberry Layer:

  • 1 package (3 ounces) cranberry or raspberry gelatin
  • 1 cup boiling water
  • 1 can (14 ounces) whole-berry cranberry sauce

Lemon Layer:

  • 1 package (3 ounces) lemon gelatin
  • 1 cup boiling water
  • 3 ounces cream cheese, softened
  • 1/3 cup mayonnaise
  • 1 can (8 ounces) crushed pineapple, undrained
  • 1/2 cup heavy whipping cream, whipped
  • Optional: mini marshmallows and chopped pecans (as used in your directions)

Directions :

  1. In a small bowl, dissolve the cranberry gelatin in boiling water. Stir in the whole-berry cranberry sauce until fully blended.
  2. Pour the mixture into an 8-inch square dish and refrigerate until set.
  3. In another bowl, dissolve the lemon gelatin in boiling water.
  4. In a separate bowl, beat the cream cheese and mayonnaise until smooth. Stir the mixture into the lemon gelatin along with the crushed pineapple.
  5. Refrigerate until slightly thickened, about 2 hours.
  6. Fold the whipped cream, marshmallows, and pecans into the cream cheese mixture.
  7. Spread the lemon layer evenly over the cranberry layer.
  8. Refrigerate for 4 hours or until fully set.
