Ingredients:
- 6 cups kale, chopped
- 1 apple, thinly sliced
- ¼ cup walnuts, chopped
- ¼ cup dried cranberries
- Dressing
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- Salt and pepper, to taste
Instructions:
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Place chopped kale in a large bowl and pour the dressing over it. Massage the kale for 1–2 minutes until softened.
- Add apple slices, walnuts, and dried cranberries. Toss until evenly combined.
- Serve immediately or chill briefly before serving.
