Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 tablespoon olive oil
- Salt and pepper, to taste
For the Rice:
- 2 cups cooked white or jasmine rice
- 1 tablespoon lime juice
- 1 tablespoon chopped cilantro (optional)
- Salt, to taste
For the Avocado Layer:
- 2 ripe avocados, diced
- 1 tablespoon lime juice
- Salt and pepper, to taste
Optional Garnish:
- Chopped cilantro
- Lime wedges
Directions:
- Marinate the Chicken:
In a bowl, whisk together honey, soy sauce, lime juice, lime zest, olive oil, salt, and pepper.
Add the chicken strips and toss to coat. Let marinate for at least 15 minutes. - Cook the Chicken:
Heat a skillet over medium heat.
Add the marinated chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked and lightly caramelized.
Remove from heat and set aside. - Prepare the Rice:
In a bowl, mix the cooked rice with lime juice, cilantro (if using), and salt to taste. - Prepare the Avocado:
In a separate bowl, gently toss diced avocado with lime juice, salt, and pepper. - Assemble the Stack:
Using a small bowl or ring mold, layer the rice on the bottom, followed by the avocado, then the honey lime chicken on top.
Carefully remove the mold and repeat for remaining servings. - Serve:
Garnish with chopped cilantro or lime wedges if desired. Serve warm.
