Ingredients:
- 1 lb ground beef
- 2 tablespoons vegetable oil
- 2 medium potatoes, peeled and diced small
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- 1 small tomato, diced (or ½ cup canned diced tomatoes)
- ½ cup tomato sauce
- ½ teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ¼ cup water or beef broth (as needed)
- Warm flour tortillas, for serving
Instructions:
- Heat oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in onion and garlic; cook for 2–3 minutes until fragrant.
- Add diced potatoes and mix well with the beef.
- Stir in tomato, tomato sauce, cumin, chili powder, paprika, salt, and pepper.
- Add a splash of water or broth, cover, and simmer for 15–20 minutes, stirring occasionally, until potatoes are tender.
- Uncover and cook for a few more minutes to thicken the mixture to your desired consistency.
- Taste and adjust seasoning. Serve hot with warm flour tortillas.
Pro Tip
For extra depth of flavor, add a pinch of dried oregano or a splash of Worcestershire sauce while simmering.
