Homemade Cream Cheese Mints

 

Ingredients:

  • 4 ounces cream cheese, softened
  • 1 tablespoon butter, softened
  • 4 cups powdered sugar
  • 1/2 teaspoon mint extract
  • Neon green, neon pink, and classic blue gel food coloring

Instructions:

  1. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Add the mint extract and mix until fully incorporated.
  3. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. The mixture will become thick and dough-like.
  4. Divide the dough into separate bowls depending on how many colors you want to make.
  5. Add a small amount of gel food coloring to each portion and knead until the color is evenly distributed. Add more coloring as needed to reach your desired shade.
  6. Roll the dough into small balls (about 1 teaspoon each). If desired, roll them in a little extra powdered sugar.
  7. Press each ball gently with a fork to create a classic mint pattern, or use candy molds for decorative shapes.
  8. Place the mints on a parchment-lined baking sheet and allow them to air dry at room temperature for several hours or overnight until firm.

Storage

Store the mints in an airtight container in the refrigerator for up to 2 weeks. Let them sit at room temperature for a few minutes before serving for the best texture.
