Ingredients:
- 6 Tbsp butter
- 8 oz white American cheese
- 6 eggs, beaten
- 6 Tbsp flour
- 4 cups small-curd cottage cheese
- 3 packages frozen spinach, thawed and well-drained
Instructions:
- Preheat oven to 350°F (175°C). Cut the butter and American cheese into ¼-inch cubes and set aside.
- In a large bowl, combine the beaten eggs, flour, cottage cheese, butter, and cheese. (Optional: add a pinch of salt and pepper.)
- Thoroughly squeeze excess moisture from the thawed spinach, then add it to the mixture and stir until well combined.
- Transfer the mixture to a greased ovenproof dish.
- Bake for 1 hour, or until set and lightly golden. Serve hot.
