Holiday Spinach Casserole

Ingredients:

  • 6 Tbsp butter
  • 8 oz white American cheese
  • 6 eggs, beaten
  • 6 Tbsp flour
  • 4 cups small-curd cottage cheese
  • 3 packages frozen spinach, thawed and well-drained

Instructions:

  1. Preheat oven to 350°F (175°C). Cut the butter and American cheese into ¼-inch cubes and set aside.
  2. In a large bowl, combine the beaten eggs, flour, cottage cheese, butter, and cheese. (Optional: add a pinch of salt and pepper.)
  3. Thoroughly squeeze excess moisture from the thawed spinach, then add it to the mixture and stir until well combined.
  4. Transfer the mixture to a greased ovenproof dish.
  5. Bake for 1 hour, or until set and lightly golden. Serve hot.
