Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese
- 1/2 cup shelled pistachios, finely chopped (plus extra for topping)
- 1/2 cup milk or buttermilk
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Mix in the mascarpone until smooth and well combined.
- Add the dry ingredients in two parts, alternating with the milk (or buttermilk), mixing just until combined.
- Gently fold in the chopped pistachios.
- Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle with extra chopped pistachios.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
