Heavenly Pistachio Mascarpone Loaf

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese
  • 1/2 cup shelled pistachios, finely chopped (plus extra for topping)
  • 1/2 cup milk or buttermilk

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix in the mascarpone until smooth and well combined.
  6. Add the dry ingredients in two parts, alternating with the milk (or buttermilk), mixing just until combined.
  7. Gently fold in the chopped pistachios.
  8. Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle with extra chopped pistachios.
  9. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
