Ingredients :
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup mixed dried fruit (raisins, currants, chopped apricots, etc.)
- 1/2 cup chopped nuts (walnuts, pecans, etc.)
- 1/2 cup orange juice

Prep:
Preheat oven to 325°F (165°C). Grease loaf pan. -
Cream Base:
Beat butter + sugar in stand mixer until fluffy (~3 mins). Add eggs one at a time; blend in vanilla. -
Dry Mix:
Sift flour, baking powder, baking soda, salt, cinnamon, nutmeg. -
Combine:
Gradually add dry mix to wet; mix until just combined. -
Fold-ins:
Fold in dried fruit, nuts, then orange juice with spatula. -
Bake:
Pour batter into pan. Bake 70-80 mins. Cool 10 mins in pan → transfer to cooling rack.
