Directions:
1. Brown the beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Add the diced potatoes, mixed vegetables (with liquid), onion, and garlic to the crockpot.
3. Combine ingredients
Add the cooked beef, diced tomatoes, beef broth, and tomato paste. Stir to combine.
4. Season
Add salt, black pepper, smoked paprika, thyme, and chili powder if using.
5. Cook
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender.
