Hawaiian Pineapple Cake

Ingredients:

Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 can (20 oz) crushed pineapple, undrained (in its own juice, not syrup)
  • 1 cup chopped nuts (optional)

Cream Cheese Frosting

  • 1/2 cup butter (1 stick)
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups confectioners’ sugar
  • Coconut for garnish (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, mix all cake ingredients together until well combined.
  3. Pour batter into the prepared pan and spread evenly.
  4. Bake for 35–40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  5. Remove cake from oven and place on a wire rack.

Frosting

  1. While the cake is baking, beat butter, cream cheese, and vanilla extract together until creamy.
  2. Gradually mix in the confectioners’ sugar until smooth.
  3. Spread frosting over the cake while it is still warm so it melts slightly into the cake.
  4. Sprinkle with chopped nuts or coconut, if desired.

Serving & Storage

  • Allow cake to cool completely before slicing.
  • Store covered in the refrigerator for up to 4 days.
  • Serve chilled or at room temperature.
