Ingredients:
- 1 lb ground beef
- 6 slices bacon, cooked and crumbled
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, diced small (fresh or frozen)
- ¾ cup barbecue-style sauce
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella (or cheese blend)
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt & black pepper, to taste
- Optional garnish: sliced green onions or parsley
Instructions:
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
- Add garlic, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well.
- Reduce heat and stir in barbecue sauce and sour cream until smooth and combined.
- Spread diced potatoes evenly in the prepared baking dish.
- Top with the beef mixture, then sprinkle bacon evenly over the top.
- Add cheddar and mozzarella evenly.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 10–15 minutes, until bubbly and lightly golden.
- Let rest 5 minutes before serving. Garnish if desired.
