Harvest BBQ Bacon Cheeseburger Casserole

Ingredients:

  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced small (fresh or frozen)
  • ¾ cup barbecue-style sauce
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella (or cheese blend)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt & black pepper, to taste
  • Optional garnish: sliced green onions or parsley

Instructions:

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.
  3. Add garlic, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well.
  4. Reduce heat and stir in barbecue sauce and sour cream until smooth and combined.
  5. Spread diced potatoes evenly in the prepared baking dish.
  6. Top with the beef mixture, then sprinkle bacon evenly over the top.
  7. Add cheddar and mozzarella evenly.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake an additional 10–15 minutes, until bubbly and lightly golden.
  10. Let rest 5 minutes before serving. Garnish if desired.
