Green Chile Cheese Scalloped Potatoes

Ingredients:

  • 2 lbs russet potatoes, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar or Colby-Jack cheese
  • 1 cup roasted green chiles, diced (Hatch-style preferred)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • Cooking spray or butter, for greasing

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a baking dish or cast-iron skillet.
  2. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute.
  3. Slowly whisk in the milk and heavy cream until smooth and slightly thickened.
  4. Stir in garlic powder, onion powder, salt, and black pepper.
  5. Remove from heat and stir in half of the shredded cheese until melted and smooth.
  6. Layer half of the sliced potatoes evenly in the prepared baking dish.
  7. Sprinkle with half of the diced green chiles, then pour half of the cheese sauce over the potatoes.
  8. Repeat layers with remaining potatoes, green chiles, and cheese sauce.
  9. Top with the remaining shredded cheese.
  10. Cover loosely with foil and bake for 45 minutes.
  11. Remove foil and bake an additional 15 minutes, or until bubbly and lightly golden on top.
  12. Let rest for 10 minutes before serving.

Pro Tip

For extra kick and crisp edges, finish under the broiler for 2–3 minutes. Sprinkle lightly with smoked paprika or green chile powder before serving.
