Ingredients:
- 1 cup yellow cornmeal
- ¾ cup all-purpose flour
- 1 tablespoon sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- 1 egg
- 3 tablespoons vegetable oil or melted butter
Instructions:
- Preheat oven to 400°F (200°C). Grease a 9-inch square pan or cast-iron skillet.
- In a large bowl, mix cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and oil (or butter).
- Add wet mixture to dry ingredients and stir gently until just combined.
- Pour batter into the prepared pan.
- Bake for 20–25 minutes, until golden on top and a toothpick comes out clean.
- Let cool slightly, then slice and serve warm.
