Golden Fried Peach Pies

Ingredients:

For the Peach Filling

  • 2 cups diced fresh or canned peaches (drained if canned)
  • 1/4 cup granulated sugar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

For the Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk

For Frying & Finishing

  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Directions:

  1. In a medium bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg (if using), and lemon juice. Stir in the cornstarch mixture and set aside to thicken.
  2. In a large bowl, whisk together the flour, salt, and baking powder. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add the buttermilk, stirring gently until a soft dough forms. Do not overmix.
  4. Turn the dough out onto a floured surface and roll to about 1/8-inch thickness. Cut into 4-inch circles.
  5. Spoon about 1 tablespoon of peach filling onto one half of each dough circle. Fold over to form a half-moon and press edges to seal. Crimp with a fork.
  6. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  7. Fry the pies in batches for 2–3 minutes per side, or until golden brown and crispy.
  8. Remove and drain on paper towels. Dust with powdered sugar before serving.
