Ingredients:
- 2 ¼ cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp ground nutmeg
- 1 tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- ¼ cup molasses
- 2 tsp vanilla extract
- ½ cup powdered sugar (for coating)
Instructions:
- In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- In another bowl, beat butter and brown sugar until light and fluffy (2–3 minutes).
- Add egg, molasses, and vanilla; mix until combined.
- Add dry ingredients to wet and mix just until a dough forms.
- Cover and chill for 2 hours (this creates the crinkles).
- Preheat oven to 350°F (180°C). Line baking sheets with parchment.
- Scoop tablespoon-sized dough, roll into balls, and coat generously in powdered sugar.
- Place 2 inches apart and bake 10–12 minutes, until cracked on top and set at the edges.
- Cool 5 minutes on the pan, then transfer to a rack to cool completely.
