Ingredients:
- 2 large chicken breasts, cut into 1-inch cubes
- 8 oz fresh mozzarella balls (bocconcini), drained
- ¼ cup olive oil
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp red pepper flakes (optional)
- Salt and pepper, to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
- In a bowl, mix olive oil, garlic, oregano, basil, red pepper flakes, salt, and pepper to make the marinade.
- Add chicken cubes, toss well to coat, then cover and refrigerate for 30 minutes–2 hours.
- Preheat your grill or grill pan to medium-high heat.
- Thread chicken and mozzarella balls alternately onto skewers.
- Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and golden (165°F internal temperature).
- Let rest for a few minutes before serving.
