Garlic Mozzarella Chicken Bomb Skewers

Ingredients:

  • 2 large chicken breasts, cut into 1-inch cubes
  • 8 oz fresh mozzarella balls (bocconcini), drained
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, mix olive oil, garlic, oregano, basil, red pepper flakes, salt, and pepper to make the marinade.
  2. Add chicken cubes, toss well to coat, then cover and refrigerate for 30 minutes–2 hours.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Thread chicken and mozzarella balls alternately onto skewers.
  5. Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and golden (165°F internal temperature).
  6. Let rest for a few minutes before serving.

Serving Tips:

  • Serve with a drizzle of garlic butter or balsamic glaze.
  • Pair with grilled vegetables, pasta salad, or garlic bread.
  • Great for BBQ parties, meal prep, or game day platters.
