Ingredients
• 7–10 pound prime rib roast
• 10 cloves garlic, minced
• 1/4 cup olive oil
• 2 tablespoons fresh black pepper
• 1 tablespoon salt
• 2 teaspoons dried thyme
• 1 teaspoon onion powder
• 2 teaspoons melted butter
Instructions
- Preheat oven to 450°F (230°C).
- Pat the prime rib dry with paper towels.
- In a small bowl, mix garlic, olive oil, black pepper, salt, thyme, and onion powder to form a paste.
- Rub the mixture all over the roast, coating it evenly.
- Place the roast on a rack in a roasting pan, fat side up. Brush the top lightly with melted butter.
- Roast at 450°F for 20 minutes.
- Reduce heat to 325°F (165°C) and continue roasting until desired doneness (about 15 minutes per pound for medium-rare).
- Remove from the oven and let rest for at least 20–30 minutes before slicing.
