Ingredients:
- 1 pound sirloin steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound small red potatoes, quartered
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1/4 cup chopped fresh parsley

Prep:
Cut steak into 1″ cubes. Toss with salt and pepper. Quarter potatoes. -
Sear Steak:
Heat olive oil in skillet over med-high. Sear steak 3-4 mins until browned (125°F for medium-rare). Remove. -
Crisp Potatoes:
Add potatoes, onion, and minced garlic to skillet. Sauté 7-10 mins until potatoes are tender. -
Garlic Butter Finish:
Push veggies aside. Melt butter in center; add parsley. Sizzle 30 secs. -
Combine:
Return steak to skillet; toss everything. Serve hot!
