GARLIC BUTTER STEAK AND POTATOES SKILLET

Ingredients: 

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound small red potatoes, quartered
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Prep:
    Cut steak into 1″ cubes. Toss with salt and pepper. Quarter potatoes.

  2. Sear Steak:
    Heat olive oil in skillet over med-high. Sear steak 3-4 mins until browned (125°F for medium-rare). Remove.

  3. Crisp Potatoes:
    Add potatoesonion, and minced garlic to skillet. Sauté 7-10 mins until potatoes are tender.

  4. Garlic Butter Finish:
    Push veggies aside. Melt butter in center; add parsley. Sizzle 30 secs.

  5. Combine:
    Return steak to skillet; toss everything. Serve hot!
