Ingredients:
- 1 (16 oz) bag coleslaw mix
- 1 (15 oz) can black beans, rinsed and drained
- 1½ cups corn, drained
- 1 jalapeño, seeded and finely diced
- 1 small red bell pepper, finely diced
- 3 green onions, sliced
- ¼ cup fresh cilantro, chopped
- 1 tablespoon taco seasoning
- ½ teaspoon ground cumin
- 1 (9.75 oz) bag Chili Cheese Fritos (reserve some for topping)
- Chipotle Dressing
- ½ cup sour cream
- ½ cup mayonnaise
- ¼ cup fresh lime juice
- 2 tablespoons chipotle sauce (from canned chipotles in adobo)
Instructions:
- In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin.
- In a separate bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
- Pour dressing over the cabbage mixture and toss to coat.
- Gently fold in most of the Fritos.
- Top with remaining Fritos just before serving and serve immediately.
