Fried Chicken Livers

Ingredients:

  • 1 lb chicken livers
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • Vegetable oil, for frying

Instructions:

  1. Rinse the chicken livers under cold water and trim away any connective tissue or green spots.
  2. Place the livers in a bowl and cover with buttermilk. Let soak for 30 minutes, then drain well.
  3. In a separate bowl, mix the flour, garlic powder, paprika, salt, and pepper.
  4. Heat about 1/2 inch of oil in a large skillet over medium-high heat until hot.
  5. Dredge the livers in the seasoned flour, coating evenly and shaking off excess.
  6. Carefully place the livers into the hot oil in a single layer.
  7. Fry for 3–5 minutes per side, until golden brown and cooked through.
  8. Remove and drain on paper towels. Season lightly with salt while hot.

Serving Suggestions

Serve hot with mashed potatoes, coleslaw, hot sauce, or gravy. They also pair well with biscuits for a hearty Southern-style meal.
