Ingredients:
- 8 large flour tortillas
- 1 pound deli roast beef, thinly sliced
- 2 cups shredded provolone or mozzarella cheese
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried parsley (optional)
- Salt and black pepper, to taste
For Dipping:
- 2 cups prepared au jus or beef broth, warmed
Instructions:
Step 1: Prepare the Filling:
Lay tortillas flat on a clean surface. Evenly layer roast beef over each tortilla, followed by shredded cheese.
Step 2: Roll the Tortillas:
Tightly roll each tortilla into a log, keeping the filling secure inside.
Step 3: Season:
In a small bowl, mix melted butter with garlic powder, onion powder, parsley, salt, and pepper. Brush the mixture evenly over the rolled tortillas.
Step 4: Bake:
Preheat oven to 375°F (190°C).
Place roll ups seam-side down on a lined baking sheet.
Bake for 12 to 15 minutes, or until golden brown and the cheese is fully melted.
Step 5: Slice and Serve:
Remove from oven and let rest for 5 minutes. Slice into 1 to 2-inch pieces. Serve warm with heated au jus or beef broth for dipping.
Serving Suggestions:
- Add caramelized onions or sautéed mushrooms for extra flavor.
- Use horseradish sauce or creamy garlic dip alongside the au jus.
- These roll ups pair well with a simple green salad or roasted vegetables.
Storage and Reheating:
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 350°F (175°C) until warmed through. Avoid microwaving to keep tortillas crisp.
